1 cup cottage cheese
2 large eggs
1/4 cup milk
2 tbsp honey or maple syrup
1 tsp vanilla extract
Zest of 1 lemon
1 tbsp lemon juice
1 cup all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 cup blueberries
Preheat oven to 375°F and grease a mini muffin pan.
Whisk cottage cheese, eggs, milk, sweetener, vanilla, lemon zest, and juice.
In a separate bowl, mix flour, baking powder, and salt.
Combine wet and dry ingredients gently. Fold in blueberries.
Fill muffin cups three-quarters full.
Bake 14–18 minutes until set and lightly golden.
Cool slightly before serving.
