These cheesy carnivore pizza muffins are loaded with ground meat, eggs, and melty cheese — a perfect low carb, high protein snack or meal with zero grains or fillers.

Ingredients

  • 1 lb ground beef

  • 2 large eggs

  • 1 cup shredded mozzarella

  • 1/4 cup grated parmesan or cheddar

  • 1/2 tsp salt

  • 1/2 tsp garlic powder

  • 1/2 tsp Italian seasoning (optional)

  • Optional: chopped pepperoni, or organ meat

Instructions

  1. Preheat oven to 375°F. Grease a muffin tin.

  2. Cook ground meat in a skillet until browned. Season and cool slightly.

  3. In a bowl, whisk eggs and mix with cheese and seasoning.

  4. Stir in cooked meat and any add-ins.

  5. Divide into muffin cups. Bake 18–22 minutes until firm and golden.

  6. Cool 5 minutes before removing.

Notes

  • Use silicone muffin liners for easy cleanup.

  • Store in fridge up to 5 days or freeze.

  • Adjust fat/protein ratio with more cheese or meat.
