These cheesy carnivore pizza muffins are loaded with ground meat, eggs, and melty cheese — a perfect low carb, high protein snack or meal with zero grains or fillers.
1 lb ground beef
2 large eggs
1 cup shredded mozzarella
1/4 cup grated parmesan or cheddar
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp Italian seasoning (optional)
Optional: chopped pepperoni, or organ meat
Preheat oven to 375°F. Grease a muffin tin.
Cook ground meat in a skillet until browned. Season and cool slightly.
In a bowl, whisk eggs and mix with cheese and seasoning.
Stir in cooked meat and any add-ins.
Divide into muffin cups. Bake 18–22 minutes until firm and golden.
Cool 5 minutes before removing.
Use silicone muffin liners for easy cleanup.
Store in fridge up to 5 days or freeze.
