Ingredients

Scale
  • 1.5 lbs chicken breast or thighs, cut into bite-sized pieces

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 8 oz mushrooms, sliced

  • 2 tbsp olive oil or butter (divided)

  • 1 tbsp flour

  • 1 cup chicken broth

  • ½ cup sour cream

  • 1 tsp paprika (plus more to taste)

  • 1 tsp Dijon mustard (optional)

  • Salt and pepper, to taste

  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken with salt, pepper, and 1 tsp paprika. Toss with flour.

  2. Heat 1 tbsp oil and 1 tbsp butter in a skillet. Sear chicken on both sides until golden. Remove and set aside.

  3. In the same skillet, sauté onion, garlic, and mushrooms until browned and soft.

  4. Add chicken broth, mustard, and remaining paprika. Scrape up any browned bits.

  5. Return chicken to skillet and simmer for 5–7 minutes.

  6. Turn off heat. Stir in sour cream until smooth.

  7. Serve over noodles, rice, or potatoes. Garnish with parsley.

Notes

  • Use Greek yogurt for a lighter version.

  • Avoid boiling after adding sour cream.

  • Add spinach or kale for extra greens.
