Soft, high-protein cottage cheese flatbread made with simple ingredients — perfect as a wrap, pizza base, or healthy snack.

Ingredients

  • 1 cup cottage cheese

  • 2 large eggs

  • 1/3 cup oat flour (or all-purpose/almond/chickpea)

  • 1/2 tsp baking powder (optional)

  • 1/4 tsp salt

  • Optional: garlic powder, herbs

Instructions

  • Blend all ingredients until smooth and thick.

  • Preheat oven to 375°F and line a tray with parchment.

  • Spoon batter into flat circles or ovals.

  • Bake 15–18 mins until golden and set. Broil 1–2 mins if desired.

  • Cool, peel off parchment, and serve or toast before eating

  • Make ahead and freeze for up to 1 month.
