1 cup cottage cheese
2 large eggs
1/3 cup oat flour (or all-purpose/almond/chickpea)
1/2 tsp baking powder (optional)
1/4 tsp salt
Optional: garlic powder, herbs
Blend all ingredients until smooth and thick.
Preheat oven to 375°F and line a tray with parchment.
Spoon batter into flat circles or ovals.
Bake 15–18 mins until golden and set. Broil 1–2 mins if desired.
Cool, peel off parchment, and serve or toast before eating
