This creamy Cajun sausage pasta is a bold, flavorful one-pot meal made with smoked sausage, Cajun spices, and a rich Parmesan cream sauce—all ready in 30 minutes.
14 oz smoked sausage (Andouille or kielbasa), sliced
8 oz short pasta (penne or rotini)
1 small onion, chopped
1 bell pepper, diced
3 garlic cloves, minced
2 cups chicken broth
3/4 cup heavy cream
1/2 cup grated Parmesan
1 tbsp Cajun seasoning
1 tbsp olive oil
Salt and pepper, to taste
Heat olive oil in a large skillet or pot over medium-high heat. Brown sausage slices and set aside.
In the same pot, sauté onion, bell pepper, and garlic until softened.
Add pasta, broth, and Cajun seasoning. Stir and bring to a boil.
Reduce heat, cover, and simmer 12–15 minutes until pasta is cooked.
Stir in cream, Parmesan, and browned sausage. Simmer 2–3 minutes to thicken.
Adjust seasoning, garnish with parsley or green onions, and serve hot.
