12 ounces pasta such as penne or fettuccine
1 tablespoon olive oil
4 cloves garlic minced
1 can 15 ounces crushed tomatoes
1 tablespoon tomato paste optional
1 cup heavy cream
1 half cup grated Parmesan cheese
Salt and black pepper to taste
1 quarter teaspoon red pepper flakes optional
2 tablespoons chopped fresh basil or parsley
Reserved pasta water as needed
Bring salted water to a boil and cook pasta until al dente reserving one cup of pasta water.
Heat olive oil in a skillet and sauté garlic briefly.
Add crushed tomatoes and tomato paste and simmer.
Stir in heavy cream and simmer gently.
Add Parmesan and stir until melted.
Season with salt pepper and red pepper flakes.
Toss cooked pasta with sauce adding pasta water as needed.
