2 large boneless skinless chicken breasts, halved horizontally
1½ cups sharp cheddar cheese, shredded
1½ sleeves Ritz or buttery crackers, crushed (about 40 crackers)
2 eggs, beaten
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
4 tbsp butter, melted
Optional Sauce:
1 can cream of chicken soup
½ cup sour cream
2–3 tbsp milk
Preheat oven to 375°F. Lightly grease a 9×13 baking dish.
Season chicken with salt and pepper.
In a bowl, mix crushed crackers, cheddar, garlic powder, and onion powder.
Dip chicken in egg, then press into cracker mixture to coat.
Place in baking dish. Drizzle with melted butter.
Bake uncovered for 30–35 minutes, or until golden and cooked through.
Optional: In a small saucepan, warm soup, sour cream, and milk to make a sauce. Serve over chicken or on the side.
