4 boneless, skinless chicken breasts (or thighs)
Salt and pepper, to taste
1 cup grated Parmesan cheese
1 cup panko breadcrumbs
2 tablespoons olive oil
3 tablespoons butter, divided
4 cloves garlic, minced
1 cup heavy cream
Fresh thyme or parsley for garnish
Optional: Red pepper flakes for heat
Season chicken with salt and pepper. Dredge each piece in a mixture of Parmesan and panko breadcrumbs, pressing to coat.
Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Cook chicken for 5-7 minutes per side until golden brown and cooked through.
Remove chicken and set aside. In the same skillet, melt 2 tablespoons of butter. Add garlic and sauté for 1-2 minutes.
Add heavy cream to the skillet and simmer for 2-3 minutes. Season with salt, pepper, and red pepper flakes (optional).
Return the chicken to the skillet and spoon sauce over the top. Simmer for 3-5 minutes.
