For the Chicken:

  • 1 1/2 lbs boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 1 tsp chili powder

  • 1 tsp paprika

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and pepper to taste

For the Street Corn Mix:

  • 2 cups corn kernels

  • 2 tbsp mayonnaise

  • 2 tbsp Greek yogurt or sour cream

  • 1/2 cup Cotija or feta cheese

  • Juice of 1 lime

  • 1/4 tsp chili powder

  • 2 tbsp chopped cilantro

For the Rice:

  • 2 cups cooked rice

  • Zest and juice of 1 lime

  • 2 tbsp cilantro, chopped

Instructions

  1. Cook chicken with seasonings until golden and cooked through; slice.

  2. Char corn in a skillet, then toss with mayo, yogurt, cheese, lime, chili powder, and cilantro.

  3. Mix cooked rice with lime zest, juice, and cilantro.
