These banana oatmeal bars are soft, chewy, and full of wholesome ingredients. A perfect energizing snack or breakfast on the go!

Ingredients

  • 2 ripe bananas (about 1 cup mashed)

  • 1 large egg (or flax egg)

  • ½ cup peanut butter or almond butter

  • 2 tbsp maple syrup or honey

  • 1 tsp vanilla extract

  • 1¾ cups rolled oats

  • ½ tsp cinnamon (optional)

  • Pinch of salt

  • ½ cup total optional add-ins (nuts, chocolate, seeds, dried fruit)

Instructions

  1. Preheat oven to 350°F. Line 8×8-inch pan with parchment.

  2. Mash bananas in a bowl. Mix in egg, nut butter, syrup, and vanilla.

  3. Stir in oats, cinnamon, salt, and any add-ins.

  4. Spread into pan and flatten evenly.

  5. Bake 22–26 minutes until set and golden.

  6. Cool before slicing into bars. Store in fridge or freeze.
