Dough:
1½ cups gluten-free all-purpose flour (with xanthan gum)
2¼ tsp yeast (active or instant)
¾ cup warm water
1 tbsp olive oil
1 tsp honey or sugar
¾ tsp salt
1 tsp xanthan gum (if not in flour blend)
Garlic Topping:
3 tbsp butter or vegan butter
3 garlic cloves, minced
½ tsp dried Italian herbs
1 cup shredded mozzarella
2 tbsp grated parmesan (optional)
Parsley or chives for garnish
Mix warm water, yeast, and honey (if active yeast). Let bloom 5–10 mins.
In a bowl, combine flour, salt, and xanthan gum. Add yeast mixture and olive oil. Stir into sticky dough.
Let rest 10–15 mins. Preheat oven to 425°F.
Spread dough into a circle on parchment-lined pan. Smooth evenly.
Melt butter with garlic and herbs. Brush onto dough.
Top with mozzarella and optional parmesan.
Bake 12–15 mins, broil 1–2 mins if needed.
Garnish and serve warm with dip.
