1 cup cooked rice, quinoa, or roasted potatoes
1 cucumber, sliced
1 cup cherry tomatoes, halved
¼ red onion, thinly sliced
½ cup tzatziki sauce
Optional: olives, feta, fresh herbs
Mix olive oil, lemon juice, garlic, oregano, salt, and pepper; coat chicken.
Cook chicken on grill or skillet until done; rest briefly.
Slice chicken against the grain.
Prepare vegetables and base.
Assemble bowls with base, chicken, vegetables, and tzatziki.
Marinate longer for deeper flavor.
