Greek Chicken Bowls with marinated grilled chicken, fresh vegetables, and creamy tzatziki over a simple base.

Ingredients

  • 1 lb boneless skinless chicken breast or thighs

  • 3 tbsp olive oil

  • 2 tbsp lemon juice

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • Salt and black pepper, to taste

  • 1 cup cooked rice, quinoa, or roasted potatoes

  • 1 cucumber, sliced

  • 1 cup cherry tomatoes, halved

  • ¼ red onion, thinly sliced

  • ½ cup tzatziki sauce

  • Optional: olives, feta, fresh herbs

Instructions

  1. Mix olive oil, lemon juice, garlic, oregano, salt, and pepper; coat chicken.

  2. Cook chicken on grill or skillet until done; rest briefly.

  3. Slice chicken against the grain.

  4. Prepare vegetables and base.

  5. Assemble bowls with base, chicken, vegetables, and tzatziki.

  • Marinate longer for deeper flavor.
