A wholesome, one-pan dinner made with lean ground turkey, roasted sweet potatoes, and savory herbs. Gluten-free and meal-prep friendly.
1 lb ground turkey
2 large sweet potatoes, peeled and diced
1 tbsp olive oil (for roasting)
1 tbsp olive oil (for sautéing)
1 onion, chopped
2 garlic cloves, minced
1 bell pepper, diced
1 tsp cumin
1 tsp paprika
½ tsp dried thyme
Salt and black pepper, to taste
Optional: 2 cups spinach or kale, ½ cup shredded cheese
Preheat oven to 400°F. Toss sweet potatoes with oil, salt, pepper, and paprika. Roast for 20–25 minutes until tender.
While roasting, sauté onion and garlic in oil for 3–4 minutes. Add turkey and cook until browned.
Stir in bell pepper, cumin, thyme, and paprika. Cook 3–5 more minutes. Add spinach, if using, and let wilt.
Combine roasted potatoes and turkey mixture in a baking dish. Top with cheese if using.
Bake at 375°F for 10–15 minutes until golden and heated through.
Add beans or eggs for variation. Freeze for up to 2 months. Reheat with a splash of broth or olive oil.
