A balanced and comforting casserole made with lean ground turkey, roasted sweet potatoes, and veggies, all baked in a savory tomato sauce — perfect for weeknight dinners or healthy meal prep.

  • 1 lb ground turkey

  • 2 medium sweet potatoes, peeled and cubed

  • 1 bell pepper, diced

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 cups spinach or chopped kale

  • 1½ cups crushed tomatoes or tomato sauce

  • 1 tbsp tomato paste

  • 1 tsp Italian seasoning

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • Pinch of chili flakes (optional)

  • ½ cup shredded cheese (optional)

  • 1 tbsp olive oil

  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F. Roast sweet potatoes with olive oil, salt, and pepper for 20–25 minutes until tender.

  2. Sauté onion, garlic, and bell pepper in oil until soft. Add turkey and brown completely.

  3. Stir in tomato paste, crushed tomatoes, seasoning, and spinach. Simmer 5–7 minutes.

  4. Layer sweet potatoes in greased baking dish. Top with turkey mixture and cheese if using.

  5. Bake at 375°F for 15–20 minutes. Let cool slightly, garnish with parsley, and serve.

Notes

  • Store in fridge up to 4 days or freeze for 3 months.
