Hearty baked energy cookies made with oats, nuts, seeds, and natural sweeteners for a balanced snack.
1 ½ cups rolled oats
½ cup chopped mixed nuts
⅓ cup mixed seeds
½ cup nut butter
⅓ cup honey or maple syrup
2 tbsp melted coconut oil
1 large egg
1 tsp vanilla extract
½ tsp cinnamon (optional)
¼ tsp salt
Preheat oven to 350°F and line a baking sheet.
Mix oats, nuts, and seeds in a bowl.
Whisk nut butter, sweetener, coconut oil, egg, vanilla, and salt.
Combine wet and dry ingredients.
Scoop and flatten dough onto baking sheet.
Bake 12–15 minutes until lightly golden.
Cool before storing.
Store in an airtight container for up to five days or freeze for longer storage.
