1 cup oats (or oat flour)
1 scoop protein powder (vanilla or unflavored)
2 large eggs
⅓ cup Greek yogurt
⅓–½ cup milk of choice
1 tsp baking powder
1 tsp vanilla extract
Pinch of salt
Optional: mashed banana, cinnamon, or chocolate chips
Blend all ingredients until smooth. Let rest 5 minutes to thicken.
Heat a greased nonstick pan over medium heat.
Pour ¼ cup batter per pancake. Cook 2–3 minutes per side until golden.
