4 slices high-protein or whole grain bread
4 egg whites
1 whole egg
1 scoop vanilla protein powder
½ cup unsweetened almond milk
1 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
Cooking spray or coconut oil, for pan
Optional toppings: Greek yogurt, berries, sugar-free syrup
In a shallow bowl, whisk together egg whites, whole egg, protein powder, almond milk, cinnamon, vanilla, and salt until smooth.
Dip each slice of bread in the custard mixture, soaking both sides for 20–30 seconds.
Heat a nonstick skillet over medium heat and lightly grease.
Cook soaked bread slices for 2–3 minutes per side, or until golden brown.
Serve warm with desired toppings.
