Low Cal Stir-Fry Rice is a quick, healthy, and colorful rice dish loaded with vegetables and a light soy-garlic sauce. Perfect for meal prep or a weeknight dinner.

Ingredients

2 cups cooked day-old brown or jasmine rice
1 cup broccoli florets
1/2 cup shredded carrots
1/2 cup bell peppers, sliced
1/4 cup chopped green onions
2 garlic cloves, minced
1 tsp grated fresh ginger
1 egg (optional)
1 tbsp low-sodium soy sauce
1 tsp rice vinegar
1 tsp sesame oil (optional)
1 tsp neutral oil or cooking spray
Optional: sesame seeds, chili flakes

Instructions

  • Heat oil in a large skillet or wok over medium-high heat.

  • Add garlic and ginger, stir-fry for 30 seconds until fragrant.

  • Add vegetables and cook 3–5 minutes until tender-crisp.

  • Push veggies aside, scramble egg in empty space (if using), then stir to combine.

  • Add cooked rice, breaking up clumps. Stir-fry 2–3 minutes.

  • Add soy sauce, vinegar, and optional sesame oil. Stir to coat evenly.

  • Serve hot, topped with green onions and sesame seeds.

Notes

Use cauliflower rice for a low-carb version.
Adjust soy sauce to taste.
Add shrimp, tofu, or edamame for extra protein.
