A fresh, protein-packed chicken burrito bowl with cauliflower rice, veggies, and Tex-Mex flavor — under 400 calories per bowl.

Ingredients

  • 1 lb boneless skinless chicken breast

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp smoked paprika

  • Salt + juice of 1/2 lime

  • 1 cup cooked cauliflower rice (or 1/2 cup brown rice)

  • 1/4 cup black beans

  • 1/4 cup corn (optional)

  • 1/2 cup shredded lettuce or cabbage

  • 1/4 cup salsa or diced tomatoes

  • 2 tbsp diced red onion

  • 12 tbsp avocado or guacamole

  • Cilantro & lime wedges (optional)

Instructions

  1. Season chicken with spices and lime. Grill or pan-cook until done. Slice.

  2. Warm rice and season with lime and cilantro.

  3. Prep toppings: rinse beans, chop veggies.

  4. Assemble bowl with rice, chicken, beans, veggies, and avocado.

  5. Serve with salsa, lime juice, or hot sauce.

Notes
