1 lb boneless skinless chicken breast
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp smoked paprika
Salt + juice of 1/2 lime
1 cup cooked cauliflower rice (or 1/2 cup brown rice)
1/4 cup black beans
1/4 cup corn (optional)
1/2 cup shredded lettuce or cabbage
1/4 cup salsa or diced tomatoes
2 tbsp diced red onion
1–2 tbsp avocado or guacamole
Cilantro & lime wedges (optional)
Season chicken with spices and lime. Grill or pan-cook until done. Slice.
