  • 2 cups cauliflower rice or 1 cup brown rice

  • 1 cup shredded lettuce

  • 1/2 cup cherry tomatoes, halved

  • 1/4 cup black beans (optional)

  • 1/4 cup diced bell pepper

  • 2 tbsp red onion

  • 1/4 avocado or 2 tbsp guacamole

  • Fresh cilantro, lime wedges, salsa

Instructions

  1. Season chicken with spices. Grill, bake, or pan-cook until fully cooked. Rest and slice.

  2. Sauté cauliflower rice with garlic and lime juice for 5 minutes.

  3. Chop veggies and prepare toppings.

  4. Assemble bowls with base, chicken, vegetables, and toppings.

  5. Garnish with lime, cilantro, and salsa. Serve immediately or store for meal prep.

Notes
