This Mediterranean Chicken Bowl combines juicy marinated chicken with fluffy grains, crisp veggies, olives, feta, and creamy tzatziki — a fresh, satisfying meal packed with Mediterranean flavor.
2 boneless, skinless chicken breasts
2 tbsp olive oil
Juice of 1 lemon
2 garlic cloves, minced
1 tsp dried oregano
½ tsp salt
¼ tsp black pepper
1 cup quinoa, couscous, or brown rice
1 cup chopped cucumber
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
½ cup Kalamata olives
½ cup crumbled feta cheese
Tzatziki or hummus, for topping
Fresh parsley or dill, chopped
Marinate chicken in olive oil, lemon, garlic, oregano, salt, and pepper for 30 minutes.
Cook grains according to package directions. Fluff and set aside.
Grill, pan-sear, or bake chicken until internal temp reaches 165°F. Let rest, then slice.
Chop vegetables and set aside.
