These Mediterranean Chicken Gyros are a fresh, healthy, and quick meal featuring marinated chicken, creamy tzatziki, and crisp vegetables wrapped in soft pita bread.
For the Chicken Marinade:
1 1/2 lbs chicken breasts or thighs
1/2 cup Greek yogurt
3 tbsp olive oil
3 tbsp lemon juice
3 garlic cloves, minced
1 tsp dried oregano
1 tsp paprika
1/2 tsp cumin
1 tsp salt
1/2 tsp black pepper
For the Tzatziki Sauce:
1 cup Greek yogurt
1/2 cucumber, grated and squeezed dry
2 garlic cloves, minced
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp fresh dill, chopped
Salt and pepper to taste
For Assembly:
4 pita breads
Lettuce, tomatoes, red onions, cucumbers
Optional: Feta cheese, olives
Combine marinade ingredients and coat chicken. Marinate for 1 hour or overnight.
Grill or cook chicken until golden and cooked through (165°F). Slice.
Mix tzatziki ingredients and chill.
Warm pita, spread tzatziki, and add sliced chicken and veggies.
