These Mediterranean Chicken Gyros are a fresh, healthy, and quick meal featuring marinated chicken, creamy tzatziki, and crisp vegetables wrapped in soft pita bread.

Ingredients

For the Chicken Marinade:

  • 1 1/2 lbs chicken breasts or thighs

  • 1/2 cup Greek yogurt

  • 3 tbsp olive oil

  • 3 tbsp lemon juice

  • 3 garlic cloves, minced

  • 1 tsp dried oregano

  • 1 tsp paprika

  • 1/2 tsp cumin

  • 1 tsp salt

  • 1/2 tsp black pepper

For the Tzatziki Sauce:

  • 1 cup Greek yogurt

  • 1/2 cucumber, grated and squeezed dry

  • 2 garlic cloves, minced

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • 1 tbsp fresh dill, chopped

  • Salt and pepper to taste

For Assembly:

  • 4 pita breads

  • Lettuce, tomatoes, red onions, cucumbers

  • Optional: Feta cheese, olives

Instructions

  1. Combine marinade ingredients and coat chicken. Marinate for 1 hour or overnight.

  2. Grill or cook chicken until golden and cooked through (165°F). Slice.

  3. Mix tzatziki ingredients and chill.

  4. Warm pita, spread tzatziki, and add sliced chicken and veggies.

  5. Wrap and enjoy!
