This creamy, quick, and easy Mushroom Spinach Pasta is a 30-minute weeknight meal made with tender mushrooms, wilted spinach, and a light garlic cream sauce.

Ingredients

Scale
  • 8 oz pasta (any kind)

  • 2 tbsp olive oil or butter

  • 8 oz mushrooms, sliced

  • 1 small shallot or onion, finely chopped

  • 23 cloves garlic, minced

  • 34 cups fresh spinach

  • 1/2 cup heavy cream (or dairy-free option)

  • 1/4 cup grated Parmesan (or nutritional yeast)

  • Salt and black pepper, to taste

  • Optional: red pepper flakes, lemon juice, herbs

Instructions

  1. Cook pasta until al dente. Reserve 1/2 cup pasta water and drain.

  2. In a large skillet, sauté mushrooms, shallot, and garlic in oil or butter until golden (6–8 minutes).

  3. Add spinach and stir until wilted.

  4. Reduce heat and stir in cream and Parmesan. Simmer until slightly thickened.

  5. Add cooked pasta and toss to coat. Add pasta water if needed to loosen sauce.

  6. Season with salt, pepper, and optional lemon juice. Serve hot with herbs or extra cheese.

Notes

  • Use gluten-free pasta if needed.

  • Vegan version: use olive oil, plant milk, and nutritional yeast.

  • Add grilled chicken or beans for more protein.
