1 lb boneless skinless chicken breast, diced
1 tablespoon olive oil
1 teaspoon chili powder
½ teaspoon cumin
½ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon salt
2 cups cauliflower rice or brown rice
1 cup shredded romaine or lettuce
1 cup canned black beans, rinsed
1 cup corn (fresh, frozen, or canned)
1 cup pico de gallo or salsa
½ cup plain Greek yogurt (optional)
1 avocado, sliced (optional)
Chopped cilantro and lime wedges, for garnish
