Tender beef, buttery potatoes, and a rich garlic sauce slow-cooked to perfection in one pot. A hearty, low-effort dinner perfect for cozy nights and meal prep.
2–3 lbs chuck roast, cut into chunks
1½ lbs baby potatoes, halved if large
6–8 garlic cloves, minced
6 tbsp unsalted butter
½ cup low-sodium beef broth
Salt and pepper to taste
Optional: fresh rosemary, thyme, parsley, Parmesan
Season beef with salt and pepper. Optional: sear in a hot pan until browned.
Place potatoes in bottom of slow cooker. Top with beef.
Add garlic, beef broth, and dot butter over the top.
Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours.
Stir gently. Taste and adjust seasoning. Garnish with parsley or cheese if desired.
Use equal-sized potato pieces for even cooking. Add carrots or green beans in last 2 hours for a full meal. Thicken sauce with cornstarch slurry if needed.
