A cozy, customizable vegan baked oatmeal made with rolled oats, plant-based milk, banana, and maple syrup. Perfect for meal prep, brunch, or a nutritious breakfast on the go.
2 ripe bananas (or ½ cup applesauce)
1 ¾ cups unsweetened plant-based milk
¼ cup maple syrup or agave
1 tsp vanilla extract
1 tbsp chia seeds or flaxseed meal
1 ½ tsp baking powder
1 tsp cinnamon
Pinch of salt
2 cups rolled oats
1 cup fresh or frozen fruit (berries, apples, etc.)
¼ cup chopped nuts (optional)
Preheat oven to 375°F (190°C). Grease or line an 8×8-inch baking dish.
In a bowl, mash bananas. Add plant milk, syrup, vanilla, chia or flax, baking powder, cinnamon, and salt.
Stir in oats, fruit, and nuts (if using).
Pour into pan and smooth the top.
Bake for 35–40 minutes, until set and golden on top.
Let cool 10–15 minutes before slicing. Serve warm or cold.
Store in fridge for 5 days or freeze for 2 months.
Use applesauce for a banana-free version.
